Different words different meanings. The game-mode itself is called gores. Singular gores map is still gores. Multiple gores maps are also gores.

Technically that's incorrect. 2 Fords don't have any particular meaning. You need to add the descriptive word behind it. For example: Two Ford cars. Two Ford symbols. It's always the descriptive word that is put into plural form. If you're lazy and skip proper grammar you can say 2 Fords, instead of 2 Ford cars. But the plural "s" on Fords is stolen from the plural "s" of cars.
