Kimchi is also one of those things that don't really expire very easily. Especially in the fridge, the bacteria responsible for fermenting the kimchi just isn't active at fridge temperatures

Grate potatoes on thick side of grater, onion too if you enjoy onion. Then you should wring out any juice you can, otherwise its very hard to get it to bind. I use a kitchen towel. After that to bind it you use egg and flour(or breadcrumb, I prefer breadcrumb)

You can make it work with a lot of vegetables too, like carrot works well, zucchini works well, a mix of all of the above works well
