I used to just join unfinished maps, with some people on it and make teams with random people

You can just ask them if they want to play the map with you, or just wait at the start line for someone who also wants to do the map

small insight, Stronghold 3 isn't a novice map lol, if you're new it's really just better starting off on novice difficulty maps and maybe later if you want to play on hh maps joining "Grandma" servers seems quite popular for the less experienced people on hh (one of the common mechanics of both maps)
