You can try to symlink the folder, not sure if that works though. Theres no in-game setting for it

symlink basically creates a virtual folder, so the original folder location is now a pointer to a new folder that's stored elsewhere (edited)

so if you save a file to your demos folder, it'll physically put it into the path you chose when creating the symlink, but you can still save files to the original location

i think ur best bet is when you save a trimmed demo to use a universal naming scheme, like "map_cut.demo" and then have a script or some kinda folder automation software to auto copy/symlink/move files with "cut" in the name to a new folder (edited)
