When I read a kanji I look at the parts of it and make a logical connection to the meaning as a whole. When I read a latin character I know what it is instantly
I only have to look at the parts if it's a character I don't know well

otherwise I can recognize it without looking at parts, I'd guess similar to how you look at english/turkish/german words as a whole and read them without looking at the components

@YupHio in my experience that's only partially true. While a huge part of it is indeed the first and the last letter. Patterns and length also matters a lot
If it's one I don't know then I just don't know. Maybe radical can hint how it is pronunced and the sentence might hint its meaning. But if you give a char I've never seen before on it's own I wouldn't know.
